CULINARY LAVENDER RECIPES
Lion Springs Lavender Farm specializes in growing certified organic culinary lavender that one can cook with. Lavender is in the rosemary, sage, basil family of spices. Lavender is famous for pairing weill with both lemon and mint flavors too. Certain varieties of lavender prove to be wonderful spices to cook with. Not all lavender varieties lend themselves to cooking though. However, culinary lavender varieties have less camphor so they make great seasonings for a variety of dishes. Some lavender, such as Pink Melissa, has a peppery taste and is great for savory dishes like fish. Other varieties such as Edelweiss, are delicious for sweet dishes such as cookies, caramels, ice cream, and lemonade. Grosso Lavender is good with roast beef and sharp cheese. Please feel free to try the following recipes from Lion Springs Lavender Farm:
1.Sleepytime Lavender Tea: Lavender tea is great for helping my customers sleep through the night. My daughter and I usually drink it one hour before bed time. It makes us feel happy and relaxed, then we drift off to sleep.
Ingredients:
1 teaspoon culinary lavender buds from Lion Springs Lavender Farm (ratio: 1 teaspoon per cup)
1 cup water
1 tablespoon honey (optional)
Directions:
Boil water and pour it into a mug or tea cup. Place one teaspoon lavender buds in a tea infuser and close the infuser. Place the infuser in the tea cup of hot water. Steep the tea for 5-10 minutes depending how strong or weak you prefer your tea. Remove the tea infuser from the tea cup. Stir in one tablespoon of honey into your tea cup. Drink one hour before bed time. Enjoy!
2. Lavender Italian Salad Dressing: My Italian grandfather taught me this delicious recipe to make great salads. The secret is to mix in each ingredient separately and toss before adding the next ingredient. Don’t mix it altogether at the same time, capisce? The last ingredient is always the olive oil because if you put the olive oil in first, all the spices and vinegar slide off the vegetables so nothing sticks. The trick is to put the lavender vinegar on first and toss it in before adding the seasonings. This way the seasonings stick to the salad to flavor it well.
Ingredients:
one salad bowl of undressed salad
2-3 tablespoons culinary lavender vinegar from Lion Springs Lavender Farm
3 dashes of Lavender Rosemary Salt Rub from Lion Springs Lavender Farm
2-3 tablespoons extra virgin olive oil
Directions: Into a bowl of undressed salad, drizzle some lavender vinegar. Toss well. Then, sprinkle on seasonings (according to taste) like Lavender Rosemary Salt Rub from Lion Springs Lavender Farm, note: you can substitute salt and pepper. Toss well to make sure everything is lightly covered. Last, drizzle on some olive oil. Toss thoroughly. Mangia!
