Welcome to Lion Springs Lavender website! Our certified organic culinary lavender farm is located in a river valley in the Santa Lucia Mountain range between Carmel and Big Sur in Carmel Valley, California. We specialize in culinary organic lavender. Please visit our booth at the Carmel-by-the-Sea Farmers Market each Thursday from 10-2 to sample delicious Carmel Caramels made with lavender honey from our farm. See you there!

Lion Springs Lavender Farm is the home of Carmel Caramels. We make delicious, mouth-watering salted lavender honey caramels right here in our permitted home kitchen at the farmhouse. We use all fresh ingredients including a small touch of our homegrown organic culinary lavender. We hope you’ll love Carmel Caramels as much as we do. A portion of  our proceeds go towards the California Mountain Lion Foundation.

…sometimes Ziggy, the lavender Husky, is at the farmers market too.

Lion Springs Lavender Farm is a certified organic, female-owned, small family business. We are working hard to keep our wonderful, and much appreciated, customers healthy and happy. Therefore, shop local, stay healthy, and help small businesses!

Our lavender is certified organic by  MCCO (Monterey County Certified Organic). We grow lavender using “green”, sustainable, organic practices to help keep the environment healthy for our neighbors, friends, families, guests, customers, and local wildlife. Our bees help to pollinate the neighboring vineyards for our fellow farmers.

Our natural well supplies all our pure water, without chemicals, for our certified organic lavender crops.

We had our first harvest in 2018, and an even bigger ones until our most recent harvest in 2022. We had a great crop of Royal Velvet, Edelweiss, Pink Melissa, Provence, and Grosso Lavenders…

We have been able to make lavender sachets and lavender bouquets, and Carmel Caramels with our fresh organic lavender this year. We are greatly looking forward to our 2023 organic lavender crop!

Here at the farm we also make “Carmel Caramels”. We have a certified home kitchen permit to handmake Carmel Caramels right here at the farm. They taste delicious!

Carmel Caramels come in glass bee hive shaped jars, and lovely purple sachets that make great gifts! Carmel Caramels are made in a permitted “home kitchen” thru the Monterey County Health Department. (Sometimes, our jars shapes vary according to what we can order on line) We also use biodegradable candy wrappers (instead of plastic) because it’s better for the environment.

We wish to use a portion of profits to go to the Mountain Lion Foundation to help save the endangered California Mountain Lions.  Therefore, when you purchase our products, we can help save mountain lions together one carmel at a time!💜
